Spicy Fruit Salad
1 orange, peeled and sectioned
1/2 medium mango or papaya, diced
1/2 cup canned cubed pineapple
1/2 Ambrosia apple, diced
1/4 cup blue berries
1/2 banana, sliced
Dressing
2 tablespoons brown sugar
1 tablespoons fresh lime juice
1 1/2 tablespoons water
1/2 inch piece of ginger, grated
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cardamon
2 tablespoons fresh chopped mint
In a medium bowl combine the fruit except the banana. Sprinkle sugar over
fruit. In a small bowl, combine the dressing ingredients. Slice bananas in to
dressing stirring well. Mix other fruit in to dressing mixing to coat. Sprinkle
with more sugar if need be.
Cover and chill for at least an hour. Before serving, blend in mint and stir
to mix.
