Bundle of Energy Power Bars
The ultimate power snack! Make a double
batch, wrap in individual bars and freeze. Use as needed. They will
keep in the fridge for up to 2 months.
1 cup nut butter (cashew, almond or sunflower)
1/2 cup + 2 tablespoons honey or rice syrup
1/4 cup carob powder
1/2 cup oat bran (if gluten sensitive use rice bran)
1/2 cup raisins or dried cranberries
1/4 cup chopped cashews or almonds
In a medium saucepan over medium heat cook
nut butter and honey. Stir constantly until soft. Add oat bran,
carob and cashews. When well blended, removed from heat and quickly add
fruit. While it is warm, spread out into a well greased 9X9 inch cake pan.
Pat down firmly (try not to burn your fingers.)
Put in fridge. When cook, slice into
bar size pieces. wrap in unbleached waxed paper followed by cellophane.
Store in freezer.
