Pizza Rolls

These delicious little gems can be stored in the freezer for emergency lunches or eaten fresh from the oven. They are more work intensive than a quick stir fry, but they do work as a treat your kids will love and not trade.

If you have a favourite bread recipe use it or check out my recipe idea for a quick delicious, nutritious, sandwich bread.

Bread dough using quick rise yeast

3/4 cup thick salsa

1 cup baby spinach leaves

3 oz grated organic cheddar cheese or dairy free cheese

Flour a large cutting board well. Roll dough for one loaf of bread out to about a 1/4-1/2 inch thickness in a rectangle shape. Keep the board well floured.

Mix the salsa and spinach together and spread over dough. Leave the top long edge of the dough clear of sauce for about one inch. Sprinkle the cheese evenly over the sauce. Beginning at the bottom end of the long edge of dough, roll the dough with the sauce in the middle. Just before you get to the other edge, roll the top edge over the roll to seal the sauce and ingredients in. Using a pastry knife, cut rounds about 1-2 inches thick and place on parchment paper. If they start falling apart pinch the edges to seal.

Let rise until they have doubled in size and then bake at 375 degrees for 15 minutes. Then try to save some until school lunchtime!
