Macaroni and Nettle Cheese

My son was eavesdropping on a conversation I with a friend about what I had done with the nettles we picked. When he heard I made Macaroni and Nettle Cheese, his comment was, "That's what the green was in the macaroni! It was good!" Fine words from a slightly picky eater! We mother's find a way to make sure they eat their greens!

4 cups cooked quinoa macaroni pasta
3-5 oz. sliced organic cheese
1/4 cup organic tomato ketchup
1/2 cup steamed nettles (4 cups fresh nettles)

1. Steam nettles until well wilted, about 5-7 minutes. Reserve liquid, add a hint of stevia and drink as tea!

2. Drain macaroni pasta, rinse and put back in pot.

3. Place pot with macaroni on low heat. Add cheese and ketchup and stir to melt.

4. Chop steamed nettles into fine pieces. Add to macaroni and cheese.

5. Serve....mmmmmm!!!
