Herbed Lemon Pasta with Cherry Tomatoes
1 lb. dry linguine
1/2 cup olive oil
Juice from 3 freshly squeezed lemons
1/4 cup chopped fresh basil
1/4 cup finely chopped fresh mint
1/4 cup finely chopped fresh Italian parsley
lemon zest from 3 lemons
20 cherry tomatoes, cut in half
freshly ground pepper
1 cup pasta stock
2/3 cup grated Parmesan cheese
Cook the pasta according to package directions. Mix the olive oil, lemon
juice, basil, mint, parsley, lemon zest, and pepper in a small bowl. Set aside.
Drain the pasta, keeping 1 cup of the pasta stock.
In a large bowl, toss the pasta with the tomatoes and then add the lemon herb
mixture. Toss. f it seems a little dry add some of the pasta stock. Grate
parmesan cheese over pasta.
