Gluten Free Chocolate Chip Cookies

Cleaning out the cereal cupboard I noticed an almost empty bag of gluten free Corn Flakes. I decided to experiment with a gluten free, easy to make, kid friendly cookie recipe. This is the result. Everyone liked them! My daughter gave them a 10 out of 10!

1 large apple
1 egg
1 tablespoon vanilla
2 tablespoons softened butter or margarine
1/3 cup brown sugar
2 1/2 cups gluten free corn flakes
1/3 cup gluten free rice crisps
1/3 cup corn flour
1/2 teaspoon baking soda
1/3 cup hemp seed
1/2 cup chocolate chips, raisins, dried cranberries

Preheat oven to 375 degrees. Lay parchment paper on cookie sheets.

Blend apple, egg, vanilla and sugar until smooth consistency.

Mix corn flakes, rice crisps, flour, baking soda and hemp seed in bowl. Add liquid and mix well. Fold in fruit of chocolate chips.

Drop spoonful of dough onto cookie sheet and tap into desired flatness. Bake for 10 minutes or until golden brown on top.

Makes 24 cookies.
