Spicy Bread Pudding

This recipe is a fabulous way to use left over bread crusts. It's delicious, cheap, and when you use a whole grain bread, very healthy.

4 cups dried bread (just leave left over slices of bread on a plate for a few days)
1/2 teaspoon salt
1 tablespoon freshly ground cinnamon
1/2 teaspoon fresh ground nutmeg
1/8 cup canola oil
1 cup milk (dairy, soy, cashew, rice)
1/2 cup succat
3/4 cup Thompson raisins
1/3 cup sliced almonds

Directions

  1. Preheat oven to 375.
  2. Break bread in to one inch pieces and place in casserole dish.
  3. In bowl mix all ingredients except bread, raisins and almonds and mix well.
  4. Loosely blend almonds and raisins in with bread.
  5. Pour wet ingredients over bread, raisins and almonds, making sure the bread is covered.
  6. Place lid on casserole dish and bake for 45 minutes to 1 hour.
