Spicy Bread Pudding
This recipe is a fabulous way to use left over bread crusts. It's delicious,
cheap, and when you use a whole grain bread, very healthy.
4 cups dried bread (just leave left over slices of bread on a plate for a few
days)
1/2 teaspoon salt
1 tablespoon freshly ground cinnamon
1/2 teaspoon fresh ground nutmeg
1/8 cup canola oil
1 cup milk (dairy, soy, cashew, rice)
1/2 cup succat
3/4 cup Thompson raisins
1/3 cup sliced almonds
Directions
- Preheat oven to 375.
- Break bread in to one inch pieces and place in casserole dish.
- In bowl mix all ingredients except bread, raisins and almonds and mix
well.
- Loosely blend almonds and raisins in with bread.
- Pour wet ingredients over bread, raisins and almonds, making sure the
bread is covered.
- Place lid on casserole dish and bake for 45 minutes to 1 hour.
